Astoria-ACES’ Farm-to-Table Initiative

Early Days

With the objective of supplying the hotels, resorts, and restaurants of The Astoria Group with freshly sourced fruits and vegetables, the Farm-to-Table initiative was founded last February 2023 and was placed under Astoria Culinary Expert Services (Astoria-ACES), the corporate catering and food solutions arm of Astoria.

At the onset of the Farm-to-Table initiative, a variety of crops were sourced, particularly from farms in Central Luzon. Crops purchased from our partner farmers include ube, saba, kamote, cassava, banana hearts, and coconut. Through the work of our talented chefs, these are now being used in both savory and sweet dishes served to our guests and clients, as well as food served at the employees’ cafeteria.

Supporting Local Farmers

Not only was it founded to secure a steady supply of fresh produce, but the Farm-to-Table initiative is a major component of Astoria’s corporate social responsibility. It holds the interest of supporting the local agricultural sector at heart, particularly the small-scale and indigenous farmers. A core tenet of the initiative is purchasing at a fair price and ensuring that the financial benefit to the farmers is equitable.

Ube as a Key Crop

As Astoria-ACES recognized the rise in popularity of the beloved ube in the global community, we also noted the challenges it faces. Many products labeled as “ube” in baking and cooking often contain artificial flavorings and colorants, and the root crop itself is only available seasonally, from October to February.  

While traditional recipes such as ube halaya, ube bibingka, and ube biko remain as popular as ever, local and international chefs are beginning to use ube in novel ways. The applications of ube include croissants, cheesecakes, mochis, lattes, and cream puffs, just to name a few. Home cooks and bakers are also now using ube to experiment in the kitchen, with products such as ube jam and powder selling out almost as soon as they hit the shelves.   

With these factors in mind, and knowing that we had a supply of real, high-quality, Philippine ube through our Farm-to-Table program, our team of chefs, agricultural specialists, food scientists, and quality control experts developed a 100% pure ube product that is shelf-stable, has no additives, colorants, preservatives, or extenders, and is easy to use both at home and in professional kitchens. 

Philippine Royal Ube Powder

By using 100% locally sourced ube, our chefs collaborated with food technicians, research and development specialists, and quality control officers to create our Philippine Royal Ube Powder and Philippine Premium Ube Powder. Both products are made entirely from ube, with no added colorants, preservatives, extenders, or additives. Despite this, our ube powders have a shelf life of at least one year, allowing real Philippine ube— previously only available seasonally — to be enjoyed all year round.

As we continue refining our product with constant testing alongside our chefs, our ube powder is presently being used in our desserts and pastries served at Café Astoria. Moreover, we have worked to ensure that our product has undergone rigorous testing, with FDA and Halal certifications.
